We recently asked our favourite Irish Instagrammer @nourishingfir to create us the sexiest stack of protein pancakes the world has ever seen. It was a bold challenge for sure, but we knew without question that she was the girl for the job.

ULTIMATE COCAO PROTEIN PANCAKES WITH WHIPPED COCONUT CREAM

Serves 2 (or 1 very hungry) people

INGREDIENTS:

  • 1/4 cup oat flour
  • 1/4 cup almond flour
  • 1/4 to 1/2 cup almond milk
  • 1 scoop PERFORM Madagascan Vanilla Protein Powder
  • 1 egg or 1 flax / chia egg
  • 3 tbsp raw cacao powder
  • 1 tbsp maple syrup (optional)
  • 1 tbsp coconut oil, plus extra for frying

Toppings (optional):

  • Whipped Coconut Cream
  • Fresh Raspberries
  • Banana Coins
  • Almond Butter

METHOD:

1. Put all your ingredients in a food processor and blend until a smooth batter forms. The amount of milk you use will depend on how thick you want the batter to be. I suggest starting with a 1/4 cup then adding more little by little if needs be.


2. Heat a little coconut oil in a frying pan and then fry the pancakes for about one minute each side. They are ready to flip when bubbles appear on the surface. You will need to re-oil the pan for each batch. I got 8 medium sized pancakes from the above ingredients.


3. Serve with your favourite toppings. These went really well with raspberries, whipped coconut cream, banana coins and almond butter!
