Blueberry Protein Muffins

Blueberry protein muffins. Soft, fluffy, dairy free. With our newly updated Blueberry Muffin Perform Protein.

INGREDIENTS

Dry:
1 serving of Vivo Life Perform Protein (Blueberry Muffin)
1 tsp baking powder
Zest of 1 lemon (plus extra for finishing)
200g golden caster sugar
275g self-raising flour (Gluten Free)
65g fresh or frozen blueberries

Wet:
170ml water
100ml olive oil
Juice of ½ lemon

SERVES 6

Directions

Preheat oven to 200°C (180°C fan).
In a large bowl, combine all of the dry ingredients.
Add the water, olive oil and lemon juice, mixing until just combined. Avoid over-mixing for the fluffiest texture.
Fold in the blueberries gently.
Spoon the batter into muffin cases.
Bake for 30–40 minutes, or until a skewer inserted into the centre comes out clean.
Cool on a wire rack before adding a little extra lemon zest on top, if desired.
