Raw Pistachio & Goji 'Rocky Road' Brownies

Does anyone remember those sinfully sweet 'Rocky Road' bars that you used to get at cake shops as a child? Packed full of chewy fruit, crunchy nuts and soft marshmallows, it was the combination of textures that made them so irresistible. They certainly wouldn't be something we would put on the menu now, but the nostalgia still remains!

We wanted to create a healthier alternative to this classic recipe, so we used a combination of pistachios and cacao nibs for crunch, and goji berries for chewiness. We then folded these ingredients into a raw chocolate brownie base to create a 100% whole food based, raw and gluten free Rocky Road Brownie!

Here's how we did it...

Raw Pistachio & Goji 'Rocky Road' Brownies

Makes 8 brownies

Ingredients:

100g pecan nuts
250g medjool dates
2 tbsp brazil nut butter
2 tbsp raw cacao powder
1 tsp cinnamon powder
Pinch Himalayan Salt
50g shelled pistachio nuts, coarsely chopped
50g goji berries
25g cacao nibs

Method:

1) In a food processor, blitz your pecan nuts for 30 seconds or so, until crumbly. Add the dates to the mix and blend them together until they start to form a ball.

2) Add the brazil nut butter, raw cacao powder, cinnamon and salt to the mix and blend again until combined.

3) Transfer the contents of the food processor to a mixing bowl. Fold in the pistachio nuts and goji berries.

4) Pour the mixture into a baking tray and transfer to the refrigerator. Allow 3 - 4 hours for the mixture to set before you cut the brownies into slices.

5) Serve and enjoy!
